Let’s boycott Winter and ring in NYE with these fun and easy Mimosa Pops!

It’s Winter. Rainy wet cold Winter!! I’m all for a white Christmas, but rainy, sleety, chilly non-Christmas Winter is just plain depressing. I miss the weather when I used to live in Florida. I prefer flip flop Decembers to hooded sweatshirt with long underwear underneath Decembers. BRRRRRR.

I think I’ll boycott Winter. Make some popsicles. Add some Champagne. And call it a warm day. Mimosa Popsicles, they’re all the rage for NYE 2015! Delicious slices of Summer just waiting to be enjoyed.
I can’t believe I’ve never tried Mimosa Pops before. SO easy and just the perfect treat. I used 5 different juices, you can use any juice that you love: Strawberry, Pineapple, Apple Cider, Blueberry, and of course Orange. I love Apple Cider Mimosas, so naturally they were amazing in popsicle form. After sampling all of the flavors, I have to say orange was my favorite. Orange juice and champagne…meant to be.

I think we are aiming for a pretty low-key New Years Eve this year. These might be just the thing. Movie night in, hangin with our fur babies, and pretending it’s Summer with some Mimosa Pops. Sounds like heaven to me.
