Blueberry Honey Chicken

1-1.5 pounds chicken thighs

1/2 cup Red wine

1/2 cup Blueberry juice

1/4 cup olive oil

1/2 cup honey

1 teaspoon Cumin

1/2 teaspoon Garlic powder

1/2 teaspoon Chili powder

1 teaspoon Paprika

1 teaspoon Salt

1/2 teaspoon Pepper

Add all ingredients to a dish and let sit for at least 1 hour.

Turn on stove to high under cast iron skillet (you don’t need cast iron, just a regular pan will do).

Add the chicken mixture to the pan.

Once liquid is boiling, turn down heat to medium.

Let simmer for about 15-20 minutes. The liquid should be cooked down and the chicken should be cooked through.

Remove from pan and serve.

I had some chicken and blueberry juice left over and didn’t know what to do with it. I literally started pouring things into a dish with the chicken to create a marinade. To my surprise, it came out pretty good. This doesn’t always happen but I’m so happy I took the risk. Chicken can get pretty boring but this is delicious.
