The holidays are over and many of us are starting to think about more healthier choices. If you have been following my blog, you know by now, that my motto is “everything in moderation”. I am not oppose to a nice juicy steak and some fries, but at the same time I do enjoy my kale salad. Today I am bringing you a healthy and delicious breakfast. Your favorite granola mixed with honey vanilla greek yogurt, fresh berries and topped with an almond, date and apricot crumble. You can prep all the ingredients in advance and keep them in a separate containers for a speedy breakfast in the morning or use the mason jar to prep it the night before to take to work.

Granola, Yogurt, Berry Parfait with Almond, Date and Apricot Crumble

Ingredients:

Crumble:

1/2 cup raw almonds 1/4 cup + 2 tablespoons soft dried dates, pitted 2 tablespoons soft dried apricots , pitted ( black sweet cherries also delicious) 1/4 teaspoon ground cinnamon

Honey Vanilla Yogurt

2 cups greek plain yogurt 1 teaspoon vanilla 2-3 tablespoons honey or to taste

Berries and Granola:

2 cups your favorite fresh berries 2 cups of your favorite granola

Directions:
For the crumble:

Grind the almonds into small pieces in a food processor. Add the dates and apricots and cinnamon and process until a chunky mixture has formed – allow some of the nuts and fruit remain coarse for a nice texture. Set aside.

For the Honey Vanilla Yogurt:

Place the greek yogurt, vanilla extract and honey in a small bowl. Whisk all the ingredients until creamy and very smooth. Set aside.

To serve:

Line up 4 tall glasses. Spoon 2 tablespoons of honey vanilla yogurt into each glass and smooth surface. Spoon 2 tablespoons of granola overtop and smooth surface. Spoon 2 tablespoons of berries overtop and smooth surface. Repeat the process. Top with couple of tablespoons of the crumble mixture and more berries if you wish. Enjoy!
